1 1/4 c. flour Pinch of salt 2 tbsp. sugar 3 eggs 2 tbsp. butter, melted 1 tsp. lemon extract 1 1/2 c. milk Combine above ingredients and prepare with crepe maker. Makes approximately 8. Let mixture set for at least 4 hours before making crepes. FILLING FOR CREPE: 1 (8 oz.) pkg. cream cheese, softened 1 1/4 c. confectionery sugar 1 - 1 1/2 c. Cool Whip Combine cream cheese and confectionery sugar, then fold in Cool Whip. Place filing in crepe and top with your favorite fresh fruit. I prefer strawberries. |
