MACROON JELLO
 

1 lg. pkg. of orange Jello (use diet Jello to cut calories)
1 can of evaporated milk
1 sm. pkg. cream cheese
1 pkg. macroon cookies, Mother's
1 sm. can crushed pineapple
1 c. sugar
1 1/2 c. of water

1. Pour milk into large bowl and place in freezer. 2. Crush cookies. Pour into a large oblong glass casserole dish to cover bottom evenly. Reserve some for the top. 3. Boil water. Mix with Jello. Put in refrigerator. 4. Beat cheese and sugar. Add Jello. Mix. Put in refrigerator. 5. Whip milk until stiff. 6. Add jello and cheese mixture on low speed. 7. Add pineapple by hand. 8. Pour mixture over crumbs. Sprinkle remaining crumbs over mixture evenly. 9. Refrigerate 3 or more hours, covered with wrap.
