CHOCOLATE CHIP MINT DESSERT
 

2 env. Knox unflavored gelatin
1/2 c. cold milk
1 c. milk, heated to boiling
1 c. whipping or heavy cream
1/2 c. semi-sweet chocolate chips
2 eggs
1/4 c. sugar
1 tsp. peppermint extract
1 c. ice cubes (6-8)

In 5-cup blender, sprinkle unflavored gelatin over cold milk; let stand 3 to 4 minutes. Add hot milk and process at low speed until gelatin is dissolved. Add cream, chocolate, eggs, sugar and peppermint extract. Process at high speed until blended.

Add ice cubes, one at a time; process at high speed until ice is melted. Pour into dessert dish. Chill until set. Makes about 6 servings.
