HOMEMADE SHERBET
 

1 pkg. unflavored gelatin
1 c. milk
3 c. fresh fruit such as peaches, blueberries, or strawberries
2 c. frozen (light) whipped topping
1/4 tsp. vanilla
1/3 c. sugar

1. Sprinkle gelatin over 1/4 cup cold milk. Let stand for 4 minutes. 2. Heat remaining 3/4 cup of milk just to boiling point. Add the hot milk to the cold milk and gelatin mixture. Stir for about 2 minutes. 3. Gradually add the sliced fruit, sugar and vanilla. Mix in a blender until mixture is smooth. 4. Pour into a bowl and chill. Stir several times during chilling until mixture becomes slightly thick when dropped from a spoon. 5. Fold gelatin mixture into whipped topping. 6. Pour into an 8 inch baking dish or small paper cups. Freeze until firm.
