EASY APPLE DUMPLINGS
 

4 apples, pared, cored
3 tbsp. granulated sugar
Dash of cinnamon (optional)

TOPPING:

2 tbsp. granulated sugar
1/2 c. all-purpose flour
1/4 tsp. baking powder
1 egg, beaten
4 tbsp. butter, melted
2 tbsp. walnuts, chopped
1 tbsp. grated orange rind

TIP: Apples can be baked a day ahead and reheated when serving.

Prepare apples. Make some slits in each apple. Place apples in lightly greased custard cups. Dust with sugar and cinnamon. Stir together sugar, flour and baking powder. Mix in egg and melted butter. Spoon batter over apples, dividing evenly. Sprinkle with walnuts and orange rind. Bake at 375 degrees until apples are soft and batter is golden brown, 25 to 35 minutes. Serve apples slightly warm with orange ice cream, or a dollop of whipping cream if desired. Makes 4 servings.
