BLENDER CHEESECAKE
 

CHEESECAKE FILLING:

2 c. lowfat cottage cheese
12 oz. cream cheese, softened
4 eggs
1 c. sugar
2 tsp. vanilla
1/2 tsp. salt

Place all ingredients in blender and blend until smooth.

GRAHAM CRACKER CRUST:

2 c. graham cracker crumbs
1/4 c. sugar
1/2 c. butter

Combine crumbs and sugar. Pour cooled, melted butter over crumbs and mix together. Press mixture onto bottom of 9-inch springform pan. Bake in 350 degree oven for about 10 minutes. Pour cheesecake filling into crust and bake at 350 degrees for about 50 minutes or until set.

Remove cheesecake from oven and spread Cheesecake Topping on (sour cream mixture - recipe follows). Bake an additional 10 minutes. Chill cheesecake overnight. (Optional: Spread 1 can cherry pie filling on top before serving.) Serves 12.

CHEESECAKE TOPPING:

1 1/2 c. sour cream
6 tbsp. sugar
1 1/2 tsp. vanilla

Mix together.
