HAZELNUT PRALINE: 1/2 c. sugar 1/4 c. water 3/4 c. chopped roasted hazelnuts CRUST: 2 1/2 c. graham cracker crumbs 2 1/2 tbsp. sugar 3/4 tsp. cinnamon 4 tbsp. melted butter CHEESECAKE BATTER: 1 lb. melted white chocolate 32 oz. cream cheese 8 tbsp. butter (1 stick), chopped 4 eggs + 1 yolk 2 tbsp. walnut liquor 1 tbsp. vanilla extract 1/4 tsp. nutmeg Chopped pralines (see above) THE PRALINE: Grease baking sheet. Combine sugar and water in heavy bottomed saucepan. Heat on high heat with minimum stirring until sugar turns amber. Take off heat. Stir in nuts. Spread on baking sheet. Freeze for 1 hour. Grind finely in cuisinart. CRUST: Combine all ingredients, press in 8" springform pan. Chill. |
