THUMBPRINT COOKIES
 

Jelly (your favorite kind)
1/2 c. shortening
1 1/4 c. brown sugar
1 egg, separated
3/4 c. chopped nuts
1/2 tsp. vanilla
1 c. flour
1/4 tsp. salt

In medium bowl, mix thoroughly the shortening, brown sugar, egg yolk and vanilla. Stir in flour and salt. Roll dough into 1" balls and dip each into lightly beaten egg whites. Roll in finely chopped nuts. Place 1" apart on ungreased cookie sheet. Bake at 350 degrees for 5 minutes and remove from the oven and press thumb gently on each cookie. Return to oven and bake for 8 more minutes. Remove from oven and put a dab of jelly into each thumbprint. Yield: 2 1/2 dozen.
