2 c. sugar 1 c. oil 3 eggs 2 c. flour 1 tsp. cinnamon 1 tsp. salt 2 tsp. baking soda 1/4 tsp. baking powder 1 tsp. vanilla 2 c. zucchini, shredded 1 sm. carrot, shredded 3/4 c. rolled oats 1 c. walnuts, chopped FROSTING: 1/2 c. soft butter 1/4 tsp. almond extract 2 tsp. vanilla 2 1/2 c. powdered sugar 1 (3 oz.) pkg. cream cheese Beat together sugar, oil and eggs in large bowl. Beat in flour, cinnamon, salt, soda and baking powder. Add vanilla. Beat 1 to 2 minutes until well mixed. Fold in zucchini, carrots, oats and nuts. Mix well. Pour into 15 x 10 x 1 inch pan (jelly roll pan). Bake at 350 degrees for 15 to 20 minutes. FROSTING: Make frosting by beating all ingredients together until smooth. Set aside. Cool bars, frost. Yield 3 dozen. |
