WELSH COOKIES
 

4 c. flour
1 tsp. salt
1 c. sugar
3 tsp. baking powder
1 c. butter
2 eggs, beaten
2 tsp. grated orange rind
1/3 c. orange juice
1 c. currants

Mix butter with dry ingredients (like pie crust). Add currants and orange rind. Beat eggs; add. Then add orange juice until dough sticks together. Roll and cut out. Bake in electric fry pan at 325-350 degrees. Sprinkle with granulated sugar while still warm.
