PINEAPPLE FILLED COOKIES
 

1/2 c. lard
1/2 c. sugar
2 eggs
2 tbsp. milk
1 tsp. vanilla
1 1/2 tsp. baking powder
2 c. flour

Cream shortening and sugar together; add eggs (well beaten), then add milk and vanilla. Mix all well, then add flour and baking powder; mix well.

PINEAPPLE FILLING:

1 c. crushed pineapple
3/4 c. sugar
1 tsp. lemon juice or extract
1 1/2 tsp. cornstarch

Heat pineapple, sugar, and lemon juice in saucepan. When it comes to a boil, thicken with cornstarch. Let cool before using.

Roll out dough. Cut out cookies with round cutter. Put small spoon of filling in center of one round, then put one round on top. Take a fork to seal around the edge. Sprinkle top of cookies with cinnamon and sugar. Bake in hot oven.
