MARINATED CHEESE
 

1 (16 oz.) block Mozzarella cheese
2 c. olive oil
1 medium red or green sweet pepper, cut into strips
1/4 c. wine vinegar
1 tbsp. crushed red pepper
1 tbsp. dried oregano, crushed
1 tbsp. green pepper corns, crushed
1 tsp. dried thyme, crushed
2 cloves garlic, halved

Cut the block of cheese into 1/2 inch cubes. Using a fork, randomly prick cubes. Place cheese in 1 quart container with a tight fitting lid. Set aside. In small saucepan, stir together oil, pepper, vinegar, red pepper, oregano, pepper corns, thyme, and garlic. Cook and stir just until heated through. Cool. Pour over cheese; cover and shake gently. Store in refrigerator 2 weeks. Can be stored in refrigerator up to 8 weeks. Great gifts.
