SAUSAGE - STUFFED MUSHROOMS
 

1 lb. lg. mushrooms
1/2 lb. pork sausage
2 tbsp. chopped onion
1 c. soft bread crumbs
1/4 c. chopped parsley
1/2 tsp. seasoned pepper
1 egg

Clean mushrooms, remove stems and chop stems fine. Saute sausage meat, stirring until cooked but not browned. Drain off fat. Add chopped stems and onion and cook until tender. Add 2 tablespoons water and remaining ingredients, cool if necessary and mix well with fingers to combine. Stuff mushrooms with the mixture and put in a shallow baking dish with a little water on the bottom. Bake in a preheated 375 degree oven about 20 minutes.
