CHICKEN FINGERS
 

1 whole chicken, skinned & boned
1 c. sifted flour
2 tsp. sugar
1 1/2 tsp. baking powder
1 tsp. salt
2 eggs, beaten
1/2 c. milk
1 tbsp. oil or melted butter

In bowl sift flour, sugar, baking powder and salt. Add eggs, milk and oil. Stir until smooth and blended. Cut chicken breast in strips. Dip in batter and deep fry. Add more milk for thinner batter. Try the batter on shrimp.
