3 c. zucchini, pared and diced 1 sm. onion, chopped 1 c. Bisquick 4 lg. eggs 1/2 c. oil 1/2 c. Parmesan cheese 1 tsp. parsley flakes 1/4 tsp. salt 1/8 tsp. pepper Mix all ingredients together, making sure zucchini is well coated. Bake in a buttered 8 x 10 inch Pyrex dish at 350 degrees for 30 minutes or until golden brown. Cut into small pieces and serve warm. |
