1 lg. onion, chopped 3 slices bacon, diced 1 (16 oz.) can well-drained tomatoes, cut up and drained again 1 c. (4 oz.) shredded sharp Cheddar cheese 3 eggs, slightly beaten 1/2 c. biscuit mix 1 c. milk 1/4 tsp. salt 1/4 tsp. crushed basil 1/4 tsp. pepper Saute onion and bacon. Drain. Spread in greased 9-inch pie plate with tomatoes and cheese. In bowl, beat remaining ingredients with beater or whisk until smooth. Pour into pie plate. Bake in preheated 375 degree oven for 30-35 minutes or until knife inserted in center comes out clean. |
