MINIATURE BACON - CHEESE QUICHE
 

PASTRY SHELLS:

1 (3 oz.) pkg. cream cheese, softened
1/2 c. butter, softened
1 1/2 c. flour

FILLING:

8 oz. bacon, cooked crisp, crumbled
4 oz. Cheddar cheese, finely shredded
4 oz. Swiss cheese, finely shredded
1 sm. onion, finely chopped

LIQUID FILLING:

1 c. half & half
3 eggs
1/4 tsp. salt
1/8 tsp. pepper

Pastry shells: Combine ingredients and shape into 1 inch balls. Place into lightly greased miniature muffin pans (1 3/4 inch) forms into shells and prick with fork. Bake at 400 degrees for 5 minutes.

Filling: Combine onion, bacon and cheeses; fill each pastry shell.

Liquid Filling: Combine eggs, half & half and seasonings in large mixer bowl. Pour into pastry shells over the bacon mixture.

Bake at 350 degrees for 20 minutes or until set. Can be prepared ahead of time and frozen.
