MINI BROCCOLI PIZZAS
 

2 c. sm. broccoli flowerets
1/2 c. sweet red pepper, cut in strips
1 can (10 3/4 oz.) Campbell's condensed cream of broccoli soup
1/4 tsp. garlic powder
1/4 tsp. dried Italian seasoning, crushed
6 English muffins, split and toasted
2 c. shredded Mozzarella cheese (8 oz.)

Preheat oven to 375 degrees.

Meanwhile, in a small saucepan over high heat, in boiling water, cook broccoli and red pepper 3 minutes. Drain well; set aside. In small bowl, combine soup, garlic and Italian seasoning. Spread soup mixture evenly over 12 muffin halves; place on baking sheets. Top each with cooked broccoli and red pepper, sprinkle with cheese. Bake 10 minutes or until cheese melts. Serve immediately. Makes 12 mini pizzas.
