HOMEMADE PIMENTO CHEESE
 

1/2 lb. sharp Cheddar cheese, grated
1/2 lb. med. Cheddar cheese, grated
1 (4 oz.) jar pimento (diced)
Mayonnaise
Salt and pepper

Grate both cheeses into a large bowl. Put in the jar of pimento, juice and all. Mix in enough mayonnaise to make spreadable. Add salt and pepper to taste.
