MINCED PORK AND PRAWN TOAST
 

1/2 lb. minced pork
1/2 lb. prawns, shelled, deveined and chopped
4 oz. canned ham (mashed)
1 egg
2 sm. boiled potatoes (mashed)
2 tbsp. chopped spring onions
1/8 tsp. salt
1 tsp. sugar
1/2 tsp. pepper
1 lg. loaf of French bread (cut into 1/2 inch thick slices)
Oil for deep frying
1 egg, beaten with a pinch of salt

1. Place all of the ingredients except bread, oil and second egg in a mixing bowl.

2. Mix well into a pastry mixture using a wooden spoon.

3. Spread meat mixture onto the slices of bread.

4. Heat oil for deep frying.

5. Dip only the meat side of the bread into the beaten egg. Deep fry over a moderate heat, meat-side down, for two minutes.

6. Turn over once; fry for just half a minute until light golden brown. Remove and place on absorbent paper.

Note: Increase heat just before bread is removed.
