PINEAPPLE - CHEESE BALL
 

1 (8 oz.) can crushed pineapple, drained
2 (8 oz.) pkgs. cream cheese, softened
1 1/4 c. green pepper, finely diced
2 tbsp. onion, finely minced
1 1/2 tsp. salt
1 1/2 c. nuts, chopped

Mix first 5 ingredients and half of nuts until well blended, shape in two equal balls. Roll in remaining nuts. Chill 24 hours. Serve with crackers or toast. Can be frozen. (You can reduce nuts to 3/4 cup, putting all into mix and roll balls in parsley - very pretty at Christmas.)
