TRUSSING A TURKEY
 

Trussing your turkey for roasting is quick and easy. This extra step will ensure your birds limbs are firmly held in place while roasting -- and your dinner guests will be amazed with the result.

1. Cut a 4 foot length of kitchen twine.

2. Center the twine across the back of the turkey, with the neck flap covering the neck cavity.

3. Pull the string over the breast, tighten to bring the wings into the body, then cross the ends and form a knot.

4. Bring the twine down towards the legs, under the ends, and wrap around until the legs are neatly tied.

5. Trim any excess string.

6. Proceed to Roast Turkey.
