Cover with hot brine. Apply caps and seal at once. Invert until cool.
In blender, process ... into chunks. Add to blender, one at a time, processing until smooth. Transfer mix to serving bowl. Serve with fresh vegetables.
Break cauliflower into ... chilled. Serve with fresh vegetables. Makes 1 1/2 cups. Note: Dip may be refrigerated only up to 8 hours or flavor is too intense.
