Pears should be slightly ... tablespoons of sauce on a dessert plate. Place pear in sauce and put a "cap" of whipping cream on top of pear. Elegant and delicious.

Place wine in ... core and halve pears. Immediately place ... peppercorns, and a little thyme. Test for doneness using tip of knife. Pears should be firm.
