GERMANY: LINZER COOKIES
 

1 lb. butter
1 1/4 c. sugar
10 egg yolks, hard boiled & cooled (put yolks through sieve)

Combine butter and sugar. Add cooled egg yolks (after having gone through sieve). Add 3 raw egg yolks and blend. Add 1/4 cup of cider vinegar, 1 tablespoon whiskey and 1 teaspoon vanilla; blend. Take enough flour to roll out (take 1/4 of the dough at a time). Cut dough out (about 1/4" thick). Take 1 egg white and a little water and whip slightly with fork. Brush on cookies after cut out. While wet, sprinkle colored sugar on top. Bake 15 minutes at 350 degrees. Watch closely. Makes approximately 8 dozen.
