2 1/2 lbs. sweet potatoes, cooked, peeled & mashed 3 eggs, beaten 1/4 c. honey 1/4 c. melted butter 1 or 2 tbsp. brandy (opt.) Pinch EACH of cinnamon, ginger and nutmeg Salt to taste TOPPING: 1/4 c. butter 1/4 c. apricot jam 1 1/2 tsp. cinnamon 3/4 c. coarsely chopped pecans Combine sweet potatoes, eggs, honey, melted butter, cinnamon, ginger, nutmeg and salt in a bowl. Mix until smooth. Pour into decorative casserole, cover and bake at 350 degrees for 40 minutes. |
