APRICOT OATMEAL MUFFINS
 

2 c. flour
1/2 c. oatmeal
1/2 c. sugar
1 tbsp. baking powder
1 tsp. salt
2 tsp. pumpkin pie spice
1 c. chopped, dried apricots
1/2 c. chopped nuts
2 eggs
1 1/3 c. milk
1/4 c. oil

Stir together flour, oatmeal, sugar, baking powder, salt and spices. Add apricots and nuts, stir to blend. Beat together eggs, milk and oil. Add all at once to flour mixture, stirring only until all flour is moistened. Fill greased muffin cups 2/3 full. Bake in a 350 degree oven for 25-30 minutes or until golden brown.
