BANANA MUFFINS
 

1 c. all bran cereal
1/4 c. milk
1 c. mashed ripe bananas
1 egg
1/4 c. soft shortening
1 c. all purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar

Combine bran, milk and mashed bananas in mixing bowl. Add egg and shortening, beat well. Sift together flour, baking powder, slat, and sugar. Add to first mixture, stirring only enough to dampen all flour. Do not beat or overmix. Fill greased muffin pans two thirds full. Bake at 400 degrees for 30 minutes, or until cake tester inserted in center comes out clean and dry. Yield: 12 medium muffins.
