1 c. butter, softened
2 c. sugar
2 tsp. vanilla
2 tsp. lemon juice
4 eggs
1 tsp. salt
3 1/2 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 c. sour cream
1 c. chopped walnuts or pecans
5 ripe bananas (4 mashed, 1 coarsely chopped)
Cream together butter and sugar. Add vanilla, lemon juice and eggs; beat well.
Sift together dry ingredients. Add to above mixture alternately with mashed bananas; add sour cream. Mix and gently stir in chopped bananas and nuts. Pour into 2 large or 3 small greased loaf pans. Bake at 350 degrees for 1 hour, 10-15 minutes or until tester indicates bread is done.
A light, delicious banana bread that freezes well.
