BANANA BRAN MUFFINS
 

1 lg. egg
3/4 c. brown sugar, packed
1 1/3 c. ripe bananas, mashed
1/2 c. raisins
1/3 c. vegetable oil
1 tsp. vanilla
3/4 c. all-purpose flour
3/4 c. whole wheat flour
1/2 c. oat bran
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt

Heat oven to 375 degrees. Grease 12 regular-size muffin cups or line with paper cups. Beat egg and sugar in medium-size bowl until smooth. Add bananas, oil and vanilla. Beat until blended and let stand 1 minute or so. Mix together dry ingredients in large bowl. Add banana mixture and mix until dry ingredients are moistened. Spoon into prepared muffin cups. Bake 20 to 25 minutes until done. Remove from pan and cool on wire rack.
