STUFFED BAKED POTATOES
 

6 baking potatoes
1/4 c. vegetable oil
1/2 c. sour cream
1/2 tsp. salt
2 tbsp. butter
1/2 pkg. frozen vegetables
1/4 c. chopped ham or bacon bits
1 c. grated Cheddar cheese

Preheat oven to 400 degrees. Wash, dry and lightly rub potatoes with vegetable oil. Bake 40-60 minutes. Remove pulp and mix sour cream, salt and butter. Fold in cooked vegetables and ham or bacon bits. Put pulp back in potato skins and sprinkle cheese on top. Place back in 400 degrees oven for 10 minutes or until cheese is melted.
