APPLE PIE FILLING
 

5 c. sugar
2 tbsp. cinnamon
1/4 tsp. nutmeg
1 c. cornstarch
1 tsp. salt
10 c. water
2 tsp. lemon juice
6 lb. apples

Mix sugar, cinnamon, nutmeg, cornstarch, and salt; blend well in saucepan. Stir in water. Cook over medium heat until bubbly. Add lemon juice. Divide liquid into 7 quart jars. Peel and slice apples and add them to juice in jars. (I put apples in first and pour juice over last.) Process 20 minutes in hot water bath. This is all ready to fill your pies. You don't have to add anything to it. Makes 7 quarts.

This recipe was given to me by my sister-in-law who loves to bake and live country style also.
