CHOCOLATE PECAN PIE
 

3 tbsp. butter
2 oz. unsweetened chocolate
1 c. light corn syrup
3/4 c. sugar
1/2 tsp. salt
3 eggs, lightly beaten
1 tsp. vanilla
1 c. chopped pecans
1 (9") unbaked pie shell
1/4 c. pecan halves
Whipped cream

Preheat oven to 375 degrees. In microwave or double boiler, melt butter and chocolate. Combine corn syrup and sugar in another pan and simmer, stirring over low heat for 2 minutes. Stir chocolate mixture into syrup and cool slightly. In a mixing bowl add salt to lightly beaten eggs. Slowly drizzle chocolate mixture into eggs; stir constantly. Blend in vanilla and 1 cup pecans. Pour into pie shell. Arrange pecan halves around surface of pie for garnish. Bake pie for 30 minutes. Serve with whipped cream.
