SPINACH LASAGNA
 

1 pkg. lasagna noodles
2 lbs. ricotta (part skim) cheese
2 lbs. cottage cheese, low fat
1 lg. jar sauce or 16 oz. homemade sauce
2 to 3 pkgs. frozen chopped spinach
Grated Parmesan cheese, fresh
Shredded Mozzarella

SPINACH LASAGNA:

1. Boil noodles.

2. Heat and drain spinach according to package directions.

3. Mix ricotta and cottage cheese.

4. Add 1 cup grated Parmesan cheese and mix well.

5. In a large lasagna pan, layer as follows a) sauce, b) noodles, 3) cheese and spinach mixture, d) repeat this sequence twice finishing with noodle layer.

6. Top with sauce.

7. Bake in 350 degree oven for 45 to 50 minutes.

8. 20 minutes before it finishes sprinkle Mozzarella over and return to oven.

9. Let stand for 20 minutes before slicing.
