SPINACH-CHEESE MANICOTTI
 

6 tbsp. butter
1/4 c. flour
1 can (10 1/3 oz.) condensed chicken broth
1 c. half and half
1/4 lb. fresh mushrooms, chopped
1 med. onion, chopped
1 carton cottage cheese
1 pkg. (10 oz.) chopped spinach, thawed and drained
2 eggs
1 pkg. manicotti shells
1 1/2 c. Mozzarella shredded
1/2 c. Parmesan

Melt 4 tablespoons butter, stir in flour and cook, stirring one minute. Gradually add undiluted broth and half and half. Boil one minute, stirring constantly. Pour 1/2 cup of this mixture into shallow baking dish.

Melt remaining butter in frying pan. Saute onions and mushrooms. Remove from heat. Add cottage cheese, spinach, eggs. Combine well. Stuff into manicotti shells. Place into sauce lined dish and pour remaining sauce over shells, covering each completely. Cover with foil, bake at 350 degrees for 50 minutes. Sprinkle on cheeses and bake, uncovered, 10 minutes more. Serves 4.
