2 lb. (3/4 inch thick) New York strip steak
1 clove garlic
Freshly ground pepper to taste
2 tbsp. butter
1/2 c. dry vermouth or dry sherry
1/2 tsp. Worcestershire sauce
1/4 c. chopped chives or green onion tops
Salt to taste
Can use tenderloin, rib eye, club, boned T-bone or porterhouse steak.
Rub steak with garlic, and season with pepper. Melt butter in a large, heavy skillet; add vermouth, Worcestershire sauce, and chives. Simmer mixture 5 minutes. Add steak to skillet; cook over high heat 3-5 minutes on each side for rare, 5-7 minutes for medium, or 7-10 minutes for well done. Sprinkle with salt, and serve immediately. Yield: 4 servings.
