SWEDISH MEATBALLS
 

These meatballs are easy on the hostess. Bake in the oven and requires no watching or turning. Our family has these on Christmas Eve and other special occasions. 1/2 lb. ground pork sausage 3/4 c. dry bread crumbs 1/4 c. milk 1 egg 1 sm. onion, finely chopped 1/2 tsp. salt 1/4 tsp. ground nutmeg 1/4 tsp. pepper 3 tbsp. flour 3/4 c. water 1 c. half & half 1 tsp. instant beef bouillon 1/2 tsp. salt Snipped parsley Hot cooked noodles or mashed potatoes

Mix beef, pork sausage, bread crumbs, milk, egg, onion, 1/2 teaspoon salt, the nutmeg and pepper in food processor. Shape into 1 inch balls. (For easy shaping, dip hands into cold water from time to time.) Place meatballs in ungreased jelly roll pan, 15 1/2 x 10 1/2 x 1 inch, or 2 rectangular pans, 13 x 9 x 2 inches. Cook uncovered in 350 degree oven until light brown, about 20 minutes.

Remove meatballs to serving dish, keep warm. Place 3 tablespoons pan drippings of shortening in saucepan, stir in flour. Cook over low heat, stirring constantly, until mixture is smooth and bubbly, remove from heat. Stir in water, half & half, bouillon (dry) and 1/2 teaspoon salt. Heat to boiling, stirring constantly. Boil and stir 1 minute.

Pour gravy over meatballs, sprinkle with parsley. Serve with hot cooked noodles or mashed potatoes. 6-8 servings about (48 meatballs). I double the gravy portion.
