LAZY TEXAS BRISKET
 

1 lg. clove garlic, minced
1 tbsp. chili powder
1 tsp. salt
1/2 tsp. dried sage, crumbled
1/2 tsp. ground red pepper
1/2 tsp. oregano
1 (4 to 5 lb.) brisket
1 tsp. paprika
1/2 tsp. ground cumin
1/2 tsp. sugar
1/4 tsp. ground black pepper

Preheat oven to 200 degrees. Rub garlic into both sides of brisket. Combine remaining ingredients and mix well. Rub into brisket. Set brisket fat side up on a large piece of foil and wrap tightly. Transfer to shallow roasting pan. Bake until tender, about 8 hours. Serve hot or cold with a barbecue sauce.

NOTE: Many ovens cannot be lowered to 200 degrees. If so, cook at about 250 degrees, but reduce cooking time to 4 to 5 hours.
