STUFFED PEPPERS
 

6 lg. green peppers
1 lb. hamburger
2 tbsp. chopped onion
1 tsp. salt
1/8 tsp. garlic salt
1 c. cooked rice
1 (15 oz.) can tomato sauce
3/4 c. shredded cheese
1 c. finely diced potatoes
1/2 finely chopped jalapeno (optional)

Cook peppers in enough water to cover for 5 minutes, then drain. Cook and stir hamburger, onion, jalapeno until hamburger is light brown in skillet; drain. Stir in salt, garlic, rice and 1 cup of tomato sauce; heat thoroughly. Stuff each pepper with mixture and let them stand upright in ungreased baking dish (8x8x2).

Pour remaining sauce over peppers; cover in 350 degree oven for 45 minutes. Uncover and cook for an additional 15 minutes longer. Sprinkle with cheese.
