2 lg. cans Italian plum tomatoes 2 lg. or 2 sm. cans tomato paste 1 med. onion, chopped fine 1/2 c. parsley flakes 3 cloves garlic, crushed 1 lg. green bell pepper, chopped fine 1/2 c. mushrooms, sliced (optional) 3 tbsp. oregano 3 tbsp. fennel seeds 2 tbsp. red pepper flakes Salt to taste 2 tbsp. basil Adjust the seasonings 1 lb. Italian sausage (optional), browned, drained, and sliced Mix all ingredients together and simmer over a low heat. It will need to be stirred on a fairly regular basis. Sauce is done when the tomatoes have cooked down and the sauce is smooth. During the last hour, add the sausage. Serve over favorite pasta or use in other recipes. |
