1 c. asparagus, cooked & chopped 2 eggs, beaten 1/2 c. evaporated skimmed milk 1/8 tsp. fresh garlic, minced (or dash garlic powder) Dash salt Dash pepper Dash onion powder 2 oz. low-fat Swiss cheese, shredded 2 tsp. mayonnaise 2 tbsp. Parmesan cheese, grated Preheat oven to 375 degrees. In small bowl, combine chopped asparagus, eggs, milk, garlic, salt, pepper and onion powder. Spray shallow 1-quart casserole with nonstick cooking spray. Pour egg mixture into casserole and sprinkle with Swiss cheese. Bake about 35 minutes, or until inserted knife comes out clean. In small bowl, combine mayonnaise with Parmesan cheese. Spread over quiche and return to oven until lightly browned, about 5 minutes. Remove and allow to set 10 minutes. Garnish with asparagus spears. |
