APPLE OMELET
 

3 tbsp. flour
1/4 tsp. baking powder
Dash of salt (optional)
2 egg whites
3 tbsp. sugar
3 tbsp. milk
2 egg yolks, well beaten
1 tbsp. lemon juice
1 lg. apple, thinly sliced
1/4 c. sugar
1/4 tsp. cinnamon

Preheat oven to 375 degrees. Sift flour with baking powder and salt. In medium bowl, with rotary beater, beat egg whits until foamy. Gradually beat in 3 tablespoons sugar, beating until stiff peaks form.

Into flour mixture in small bowl, beat milk and egg yolks until smooth. Using a rubber scraper or wire whisk, with a gentle under-and-over motion, fold into egg whites along with lemon juice, just until combined. Slowly heat large buttered skillet, spreading evenly.

Arrange apple slices over top. Sprinkle with 1/4 cup sugar and cinnamon mixture. Bake about 10 minutes or until top is glazed. Serve warm; cut into wedges. Serves 4 to 5.
