"CREAM" CHEESECAKE
 

2 tbsp. diet butter
1/2 c. graham cracker crumbs
8 oz. low calorie cream cheese or lowfat neufchatel cheese
1 c. egg substitute
1/4 c. granulated sugar and sugar substitute equal to 1/4 c. sugar
1 tbsp. vanilla extract
1 tsp. grated lemon or orange rind
1/3 c. skim milk
Pinch of butter
Flavored salt

Spread the inside of an 8-inch nonstick round cake or pie pan with diet butter. Press the crumbs into the surface. Quick brown in a hot 450 degree oven for 6 to 8 minutes. Combine all remaining ingredients in the blender and blend until smooth. Gently pour into the crumb crust. Bake in a slow 250 degree oven for 1 hour. Allow to cool in oven with door open for 1 hour. Chill before serving. Serves 8 at 136 calories per serving.
