2 lg. baking potatoes
1/2 c. lowfat cottage cheese
Dash garlic powder
Dash onion powder
Paprika
Parmesan cheese
1. Bake potatoes.
2. Cut a slice from top of each potato and scoop out the pulp.
3. Blend cottage cheese until creamy.
4. Mash potato pulp and blend with cottage cheese to make a light, fluffy mixture.
5. Stir in onion and garlic powder.
6. Spoon mixture back into the shells, mounding it slightly.
7. Place stuffed potatoes on a baking sheet, dust the tops with Parmesan cheese and paprika.
8. Bake until browned.
