INDONESIAN SATE WITH PEANUT SAUCE
 

1/4 c. Indonesian (sweet) soy sauce (Ketjap Manis - available at Chinese food store)
3-4 tbsp. brown sugar
2 tsp. lemon juice
1/2 tsp. grated ginger root
1/4 tsp. ground coriander

Mix above ingredients and pour over meat which has been cubed. Marinate at least 3 hours and preferably overnight. Place meat on skewers and grill over hot charcoal fire. Serve with peanut sauce.

PEANUT SAUCE:

1 tbsp. vegetable or peanut oil
1/2 chopped med. onion
1/2 tsp. hot chili oil, if desired
1 tbsp. lemon juice
1/2 (18 oz.) jar peanut butter, crunchy or smooth
Hot water

In small saucepan, saute onion in oils until clear. Add peanut butter and stir constantly over low heat until smooth. Add lemon juice. Mixture will thicken and look curdled. Now slowly add enough water (1/2 to 1 cup) to make a smooth sauce. This will be a gradual process, as at first the mixture will thicken, rather than thin, Serve with sate, using as a dipping sauce.
