2 c. hot, mashed potatoes
1/4 c. melted butter
2 c. sugar
1 1/2 c. buttermilk
4 eggs, beaten
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1 tsp. nutmeg
3 tsp. baking powder
7 c. flour
Cook potatoes until done. Mash and measure 2 cups. Melt butter in potatoes and add sugar, beat. Sift flour with salt, baking powder, baking soda and nutmeg. Add to potato mixture alternately with buttermilk. Beat in eggs.
Roll 1/2 inch thick. Cut into doughnuts. Place in a warm place and cover. Heat oil to 375 degrees, fry top side up first, turn and fry other side. Drain and coat with sugar.
