FILLING FOR 9 INCH PIE:

1 3/4 c. strained mashed sweet potatoes
1 tsp. salt
1 1/2 c. milk
2 lg. eggs
1 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1 tbsp. melted butter

Beat together all ingredients and pour into pastry lined pie pan. Bake just until a silver knife inserted into side of filling comes out clean, about 425 degrees for 45 to 55 minutes. The center may still look soft but will set later. Serve slightly warm or cold.
