2 lb. top round, cut 1" thick 1/2 c. flour 1 tsp. salt 1/2 tsp. pepper 2 tbsp. fat 1 can canned tomatoes 2 lg. onions Cooked broad noodles Cut meat into serving pieces. Combine flour, salt and pepper. Pound flour mixture into meat, using the edge of a heavy saucer or mallet designed especially for the purpose. Melt fat in pan over low heat. Brown meat on both sides; add tomatoes, cover, cook slowly about 1 hour. Cut onions crosswise into half inch slices. Place on top of meat and cook about 1/2 hour longer until meat and onions are tender. Serve over noodles, using meat drippings over all. |
