SWISS APPLE FRITTERS
 

3/4 tsp. cinnamon
6 tbsp. sugar
8 med. sized apples, sliced 1/4 inch thick
3 tbsp. brandy
2 c. flour
1 3/4 tsp. baking powder
3/8 tsp. salt
3 egg yolks, beaten
3 tbsp. olive oil
1 2/3 c. beer, light
3 egg whites, beaten stiff
Fat for frying
Confectioners sugar

Mix cinnamon and sugar. Sprinkle apples with sugar mixture. Pour brandy over them and stir the slices around, allowing the brandy to mix with the sugar. Let stand for 1 hour, covered. From time to time, pour brandy from bottom of bowl over apple slices.

For batter, mix dry ingredients, sift twice. Add egg yolks and olive oil. Stir in the beer carefully and slowly and beat mixture to prevent lumping. Fold in egg whites and use batter for dipping apples.

Fry in deep hot fat (360-370 degrees) until golden brown. Drain and sprinkle with confectioners sugar.
