DUTCH APPLE CAKE
 

2 c. flour
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
2 eggs
1 c. cooking oil
1 tsp. vanilla
1 1/2 c. sugar
4 c. chopped tart apples (1 1/2 lb.)
1 c. chopped walnuts

Grease and flour 10 inch bundt pan. Stir together flour, baking soda, salt and cinnamon. In mixing bowl, beat eggs 2 minutes on high speed until light. Add cooking oil and vanilla and beat 2 minutes more until thickened. Gradually add sugar until dissolved. Add the dry ingredients and finely chopped apple alternately to the beaten mixture, putting on low speed after each addition until just combined. Beat on medium speed for 3 minutes. Fold in chopped walnuts. Turn batter into pan. Bake at 350 degrees for 55 to 60 minutes. Cool 10 to 15 minutes. Remove from pan. Cool and drizzle with icing.

ICING:

1 c. sifted powdered sugar
1 tsp. vanilla
2 tbsp. milk

Stir together and drizzle over baked cake.
